Quick and Easy: A Recipe Post

Hi! Today has been a lazy day. I’ve been enjoying this warm, breezy, springlike weather before the cold is supposed to return this weekend (Mississippi for you- HA!). I came up with a very quick, easy one-pan sauce that is not only “throw and go,” but it’s delicious over pasta! I wanted to add mushrooms to it, but I was literally using what was left in the cupboard. It really is the perfect “lazy meal.”
All credits go to my amazing mama, who could make anything taste yummy to the tummy. Enjoy!
Creamy Spinach Pasta:
1 box ziti pasta
1/2 stick butter
1-2 c. grated Parmesan cheese
1 can evaporated milk
1/2 tsp. garlic powder (or more to taste)
One container (about 4 c.) baby spinach leaves
Boil pasta, drain, and set aside. In a medium skillet, melt butter. Add Parmesan and garlic powder, and stir until it makes rue-like consistency. Add milk, a little at a time. If sauce becomes too thin, add more Parmesan. Stir in spinach, a little at a time. Note- it will look crowded, but the medium heat will make the spinach wilt and cook down. Simmer on low heat for about 10 minutes. Pour over pasta, and enjoy!
