Most important meal of the day…

Merry Christmas, everyone! I hope everyone has had a wonderful holiday! I have personally enjoyed the extra time off and spending time with family.

I wanted to share a delicious breakfast casserole recipe that my mom made for us Christmas morning. It was so delicious, that we reheated the leftovers later in the day. It was a treat, and it gave me all of those warm, comfy feelings of Christmas, especially being home for the holidays. Enjoy!


Mom’s Breakfast Casserole:


1 pkg cubed frozen hash browns with peppers and onions


2 rolls Jimmy dean ground sausage, regular, browned


6-8 eggs


2 c. 1% milk


1/4 tsp. Each: salt, pepper, garlic powder


2 pkgs Sargento shredded cheese (4 state cheddar)


Brown sausage and drain. Spray a 13x9 casserole dish with cooking spray. Layer potatoes on bottom. Over potatoes, place sausage. In a separate bowl, beat eggs, milk, and seasonings, pour over sausage. End with cheese on top. Bake at 350 for about 50 minutes or until done.
