It's Been a Minute...

Hi, friends!!! I hope everyone has been enjoying summer and staying cool!!! We've been busy with our annual Summer Library Program, and a good time was had by all!!! Now, we're getting in gear for getting back to school. Like I always say, let me get to the beach one time and I'm all about Halloween, apple candles, and all things fall!!!


I wanted to share with you something my mom recently made for dinner, and I was shocked at not only how yummy it was, but how easy it is to make. It's especially perfect for busy weeknights when you want a home-cooked meal, but with ease. Enjoy!


Mom's Spaghetti Pie:


1 (7 oz.) pkg. thin spaghetti


2 tbsp. Olive Oil


3/4 c. Parmesan Cheese


2 eggs


1 c. Ricotta Cheese


1 c. spaghetti sauce (Tip: try the Prego roasted garlic and parmesan flavor- YUMMO)


Shredded Mozzarella


In a large bowl, toss cooked spaghetti with olive oil. Add Parmesan cheese, beaten eggs, and Ricotta to spaghetti. When well combined, pressed into a greased pie plate. Pour spaghetti sauce on top of spaghetti mixture. Bake at 350 degrees for about 25 minutes. Remove from oven and sprinkle Mozzarella on top. Return to oven for 10 minutes. Let pie rest for about ten more minutes before cutting into wedges. Serve with garlic bread and salad or fruit.
