Homemade Goodness- A Recipe Post

I’ve always loved baking. While I enjoy all types of cooking in general, baking has always been my favorite. My guess is that it was such a special treasure passed down to me from both my mom and grandmother. Plus, it’s so much fun and a great way to pass the time on a lazy Sunday afternoon.
One of my favorite recipes is a homemade chocolate fudge frosting (not from a can, mind you) that I make when baking birthday cakes for the special people in my life. Its especially delicious on top of a Duncan Hines yellow cake (my favorite!). Of course, you can always mix it up and use any cake flavor you like. A lot of my friends tend to act skeptical, thinking that it’s too hard to make. The truth is is that it’s actually very simple and delicious- a win win!
Although I’ve adopted this recipe and claimed it as my own for many years, I can’t take credit for it. It was something I found in one of those aged Southern church cookbooks, the ones with the best recipes, in my opinion. Anyway, I hope
you enjoy. Here it is:
Homemade Chocolate Fudge Frosting:
1 stick melted butter
3-4 tbsp. Cocoa powder
6 tbsp. milk
1 (1 lb.) box confectioners sugar
1 tsp. vanilla
pinch of salt
Melt butter in a medium saucepan. Add cocoa powder and milk, whisking together, and increase heat to medium. Constantly whisk together to prevent scorching at the bottom. HERE IS THE MOST IMPORTANT PART: Bring the mixture to a rapid boil, while stirring constantly, and boil for LITERALLY ONE MINUTE. Afterwards, remove immediately from heat. Add powdered sugar, vanilla, and salt. Return to low heat and let simmer until sugar is dissolved and consistency is smooth and pourable. Spread over completely cooled cake- enjoy!
