Comfort Food w/ a Twist: Quick Recipe/Dinner Idea

I love to cook. Specifically, I enjoy baking of all kinds. Lately, I have been trying to branch out of my baking comfort zone (as much as I love it) to try different cooking projects. Recently, things have been "crazy busy," so I'm always looking for easy "throw-it-all-together" dinner ideas to get by. Of course, they have to be reasonably healthy and delicious, too.


A recent blog that I have come across (thanks to my Pinterest obsession) is "Joyful Momma's Kitchen" (link at the bottom of this post). She provides TONS of yummy recipes, and one thing that not only caught my eye, but has become a huge staple are these chicken and green-chile enchiladas. They are very easy to put together, but you do need to make sure you boil your chicken breasts or use precooked chicken to save time, as well as make the green chile sauce. The sauce itself takes only a few minutes, and it is worth it because the flavor explosion is to DIE for.
